How we cook it
Homemade sauces, one wok-fast kitchen
The bolognese and the pesto are homemade — that's on the menu in writing, and it's the part we'd want to know before ordering pasta at a Thai cafe. The carbonara goes the mushroom-and-egg-yolk route (vegetarian, as it happens), the alfredo leans on cream and parmesan with proper shrimp, and everything is cooked when you order it, not held in a pan.
Two of the six carry a Thai accent, because of course they do: spicy shrimp with dried chili, fresh pepper and basil, and a dried-chili-bacon plate that regulars order once as a curiosity and then forever. Most of Ao Nang's pasta gets eaten on the main strip with scooters for ambience. Ours gets eaten around a long stone water table that flows into a fish pond, in a light, minimalist room inside Ao Nang Landmark — five minutes' walk from Nopparat Thara Beach, with parking outside and no booking needed.
It suits the lazy-lunch shape of a beach day: come in from the sun around one, take the long way through a spaghetti and an iced signature coffee, and let the afternoon reorganize itself around you. Kitchen's open 8:00–18:00, so pasta at eleven in the morning is entirely legal here.
