The bread story
Real sourdough, years in the making
When the twin sisters behind Thongyib Thongyod opened the cafe in 2020, they made one early decision that still shapes the menu: no ordinary sandwich bread. Instead they partnered with a local artisan baker, and together we've spent the years since refining a naturally leavened sourdough — slow fermentation, no shortcuts.
The result is bread with a proper crust and an open, slightly tangy crumb that stands up to eggs, avocado and the grill. It's the base of our best seller, the Bacon Scrambled Eggs Toast (199฿), and of nearly every toast and grilled sandwich we serve. There's more on the sisters and the cafe on our about page.

Why it matters
What "naturally leavened" actually buys you
Real sourdough rises on a live starter instead of commercial yeast, and the difference is time: the dough ferments slowly, developing the gentle tang, the open crumb and the crust that crackles instead of bends. That long fermentation also breaks the flour down further than a fast factory loaf does, which is why many guests tell us sourdough sits lighter than ordinary bread — and why it toasts so well, holding a crisp face under wet toppings like avocado and soft eggs instead of going limp.
One myth worth clearing up while you're here: sourdough is not gluten-free — it's wheat, fermented well.
